Cocktails these days are getting a makeover with guests becoming more demanding. Muddling, squeezing and pouring innovative drinks made with fresh fruit, herbs and top-shelf liquors have been happening for a while. It is this endeavour to be different which has resulted in several exciting signature cocktail offerings.

I recently experienced the Vela Sherry at Willows, the Bar at Westin Chennai Velachery. Pretty innovative I thought. The name too. A sensational signature drink, Vela Sherry was apparently accidentally created by their in-house bartender using some seasonal fresh fruits, natural sweetener and classic vodka and an appealing presentation over crushed dry ice. A bartender told me that guests are familiar with the classic cocktails, and they now want to experiment and experience new things; hence the plethora of exciting signature cocktails. Manchester United Café and Bar’s signature cocktail, is a crazy blend of five white spirits and six dark spirits, topped with four fresh fruit juices, poured over crushed ice. Truly, it is the devil’s poison. This potent potion called ‘The Red Devil’ contains the highest quality ingredients and premium liquors such as Gordon Gin, Smirnoff Regular Vodka, Camino Tequila, Haig and Southern Comfort Whiskey, Jim Beam Bourbon, Captain Morgan Rum, Honey Bee Brandy, Amaretto Liqueur, Banana/ Strawberry Liquor, Orange Juice, Pineapple Juice, Sweet and Sour, Cranberry Juice, Grenadine Syrup garnished with a lime tail and/or a cherry. Whew! That’s some cocktail.
Sangria de Sergi, a Signature recipe by Chef Sergi Arola is another personal favourite at Arola, JW Marriott Mumbai. Also, Arola Dry Martini, with Tanqueray no. 10, dry vermouth, bitters and grapefruit zest is a runaway hit.
A fizzy long refreshing drink served in a highball with a definite zesty orange flavour, and a dash of coconut, is what I once sipped at ITC Maurya Delhi. It was love at first sip. Upon asking, I discovered it was Delhi High 5, their signature cocktail. It rightfully, deserved that place. It contains Malibu, Bacardi, Cointreau and a lot more.
