Mushrooms make for delightful hor d’oeuvres. Here’s a simple to make but complex in flavours appetiser that’ll be an instant hit at your next home party.

Mushroom duplex

Ingredients
8-10 nos mushrooms
4 tbsp refined flour
Salt to taste
Crushed black pepper to taste
Breadcrumbs as required
Oil for frying

For Stuffing
1 tbsp oil
1 tbsp chopped garlic
2 tbsp chopped onion
2 tbsp chopped celery
½ cup boiled and chopped spinach leaves
A pinch of nutmeg powder
1 tbsp chopped spring onion
¼ cup grated cheese
Salt to taste
Crushed black pepper to taste

For Batter
½ cup refined flour
1 nos egg
1 tsp red chilli powder
Salt to taste

For Dip
¼ cup mayonnaise
1 tbsp grated cheese
1 tsp mustard paste
1 tsp red chilli powder
4-5 nos basil leaves
1 tsp oil

For Garnish

1 nos tomato wedge
Red chilli powder as required

Method
To prepare stuffing, in a pan heat oil; add chopped garlic, chopped onion, chopped celery, salt, crushed black pepper, boiled and chopped spinach, nutmeg powder, chopped spring onion, grated cheese and mix well.
Scoop out the stem discarded mushrooms, stuff with the prepared filling and with the help of toothpicks join two stuffed mushrooms.
In a bowl add the mushrooms and marinate them with salt and crushed black pepper.
Add refined flour and remove from the bowl.
To prepare batter, in a bowl add refined flour, egg, red chilli powder, water, salt and whisk well.
Mix the mushrooms in the batter and coat with the breadcrumbs.
Heat oil for frying.
Fry the mushroom duplex in hot oil until golden brown and remove on a tissue paper. Cut the mushrooms from centre.
To prepare dip, in a bowl add mayonnaise, grated cheese, mustard paste, red chilli powder. Chop basil leaves, add to the mixture and mix.
Add oil and mix it well.
Decorate the plate with the prepared dip and arrange the mushroom duplex and sprinkle red chilli powder.
Chop one wedge of a tomato, add salt and garnish with it.
