Keep your burger together
Tired of eating messy burgers and sandwiches? G. Muthu Kumar, executive sous chef, Novotel, says that it all depends on the type of bread, the filling and the sauces you choose. “A lot depends on these three factors. If you’re looking for a healthy option then choose white meat like chicken or turkey. Also choose your sauces wisely. They are the binding factor.”
Butter, cheese and tomato ketchup are excellent binding agents. A grilled sandwich gets less messy.
If you use more sauces, it will spill. Mayonnaise-based sauces are messier.
How the filling is cooked also makes a difference to the burger/sandwich. While making a veg pattie, add ketchup to it. With tuna, you can use either mayo or tartar sauce.
Make the burger pattie smaller than the bun and about an inch thick. This way it sits perfectly in the middle and can also accommodate the remaining fillings like tomato, lettuce etc.
