Food for the Gods

The holy month of Shravan heralds a season of prayer, fasting, and various festivals. A lot of people avoid ingredients they would otherwise enjoy during this month of penance. But that doesn’t have to make food taste any less exciting. I’m sharing two vegetarian recipes that are easy to make and undoubtedly delicious.

Makai aur palak ke seekh

Ingredients
100 gm spinach
50 gm American corn
10 gm jeera powder
10 gm breadcrumbs
5 gm green chillies
100 ml oil
Salt to taste

Method
Wash and microwave the corn kernels for 10 minutes. Drain and pulse to get a coarse paste.
Wash and blanch the spinach leaves and chop them along with some corn so that it gets smooth.
Mix above mixture with oil, green chillies, jeera powder, salt and breadcrumbs for binding.
Finally shape them on skewers and cook over a tandoor (electric or otherwise) in high temperature for the smoky taste on the outside
Serve with green chutney.

Bharwan kumbh

Ingredients
100 gm mushroom
10 gm fenugreek
50 gm cheese
20 gm cashew nuts
10 gm almond
5 gm garlic
50 gm curd
10 gm jeera powder
5 gm garam masala powder
7 gm spinach purée
Salt to taste

Method
Clean the mushrooms thoroughly and de-stem them carefully while retaining the caps.
Chop the stems very fine. Slit the stem into vertical halves. Slit each half into three pieces and then place them together and chop into little bits.
Heat the oil and sauté the garlic, chopped chillies, fenugreek and spinach purée. Cook for two to three minutes and finally add a little salt. Add the cashew nuts and the almonds.
Sauté for a minute or so along with the chopped mushroom stems.
Saute till the mushrooms sweat out all the water and the mixture is dry. Add the spices and mix. Set aside to cool.
Fill a little of the stuffing into each cap, and top with of cashew and almond. Spread it and seal it properly.
Pre-heat tandoor to moderate temperature. Cook the mushrooms till the cheese melts, and the mushrooms start developing streaks of brown.
Serve with green chutney and simple yogurt chutney
